Cracking the door at the end of a steam sterilization cycle goes back to the days of gravity-only sterilization cycles when woven cotton muslin wraps with good absorption properties were commonly used to wrap instrument sets. With the reduced likelihood of external water, and in the absence of modern mechanical vacuum systems, cracking the door to allow drying of muslin wrapped packs was an acceptable method to help ensure dry packs.
Today, in the age of less absorbent non-woven wraps, AAMI ST79 recommends that SPD professionals reject any wrapped pack with external moisture droplets at the end of a steam sterilization cycle1. This is to prevent potential recontamination of the instrument set by wicking of microorganisms through the wrap. Since no wrap manufacturer can guarantee sterility when there are visible water droplets on the outside of a pack, this also means that personnel must not use the cracked-door technique to dry the packs.
Steam Table Crack
In the case of sterilized packs with internal moisture, leaving products in the sterilizer with the door cracked to assist drying may not work as well as pulling the load out of the sterilizer and into the cool-down area. If the sterilization wrapper does not have external moisture, and the pack is not handled until cooled to room temperature, the wrapper will protect the inside of the pack from contamination, even if the inside of the pack is still slightly damp.
Over time, sterile processing staff members have used a variety of methods to compensate for poor steam quality, including the use of linen shrouds and absorbent shelf and tray liners. Cracking the steam sterilizer door is NOT the answer. The best thing to do is to perform a thorough wet pack investigation to find the root cause of the moisture and work diligently toward resolving the underlying issue.
Although acceptable in the days of gravity-only cycles and muslin sterilization wrap, it is no longer necessary to crack the sterilizer door following a steam sterilization cycle and it may hinder the drying process. The door-cracking process has been passed down in sterile processing departments over the years as a natural and necessary part of the sterilization process. Removing the load immediately following completion of the sterilization cycle improves both drying and SPD productivity. By allowing the cooling process to begin as soon as possible, the sterilizer is also available for additional loads to be processed.
Food pans have several uses in a commercial kitchen. Stainless steel pans are useful in a hot food table to keep food warm for service. Plastic food pans are great for keeping food at a range of temperatures from cold to hot. These types of pans are ideal for different uses based on their construction material.
Stainless steel pans can be made in different thicknesses or gauges. Gauge is the thickness of a steam pan and can range between 20 to 25 gauge. With gauge, the lower the number, the thicker the steel. The thickness should be chosen based on what you want to use the pan for.
Some stainless steel steam pans can come with special features and configurations to better fit the needs of your commercial kitchen. These features can include things like anti-jamming sides for stacking, or perforated bottoms for steaming. Read more about features below.
Anti-jam sides are included in steam table pans to allow for easy stacking and storage. Often when you need to store a steam pan, you need to stack them together. However, typical stainless steel pans will stick when stacked together. This feature allows you to stack pans without damaging the sides and corners.
Steam table pans with pour corners allow for easy cleaning and pouring. It also provides additional reinforcement against dings and dents in your pan. Pour, or coved, corners will help extend the life and use of your steam pan.
The foodservice industry has come to rely on a group of vendors to provide the best in food pans and steam pans. These manufacturers produce quality, reliable food pans that you can use in your commercial kitchen.
Vollrath: Known in the industry as innovators of the steam pan, Vollrath offers a variety of food pans and accessories. Their Super Pan V Stainless Steel Steam Pans are made with durable pour corners and are offered with a lifetime warranty.

A cook noticed an unusual smell and saw a small flame coming from a crack in the steam table. The cook extinguished the flame with water and notified the supervisor. The supervisor noticed a small amount of black smoke coming out of a crack on the steam table and immediately unplugged it. The cabinet doors were opened, and no flame was seen. The electricians removed the electrical panel access cover and found the terminal block smoldered. RELATED STORIESOffshore Workers Suffer Biological Hazards Exposure

A kitchen worker was prepping a gas chargrill for a meal. While trying to light the grill with the electrical ignitor, the worker witnessed an electric arc coming from the hinge bracket on the grill. The worker shut off power to the grill and notified the control room. Further investigation found the hinge bracket had broken and was pinching the ignitor wire causing it to arc and to be cut in half.
Sparks and smoke were observed from a receptacle in a stateroom. A hand-held chemical extinguisher was used on the receptacle, and the incident was reported to the bridge. The breaker was opened and locked out. It was discovered that the 16 amp circuit could not withstand the prolonged use of 12.8 amp portable space heaters. The crack on the surface of the steam table may have allowed steam to enter the enclosure and short out the electronics inside, causing a fire.Source: BSEE
This stainless steel pump dispenses larger portions of thick dressings and thicker sauces from a 1/6-size pan in a food table. A full portion for this model is 2 oz and can be reduced to serve 1 3/4, 1 1/2 and 1 1/4 oz with the included portion collars. Pan is sold separately.
You will want your repair to be as seamless as possible, so push the cracked area back flush with the rest of the plastic. Once everything is flush, make sure to clean both sides of the water table to ensure a good seal.
Next cut a piece of hard plastic that is just larger than the crack. Apply more clear caulk to the plastic piece (it is white when it first comes out of the tube, but it dries clear). The key to this seal working is lots of adhesive. Remember you are placing the patch on the underside of the table.
Use your finger to apply a thin layer of caulk over the edge of the plastic as well. Sealing right to the water table. We also flipped the table back over and ran a thin bead of caulk over the crack. Set the table aside for about a day to allow for the caulk to dry and cure. It will be clear once everything is dry.
Various parameters need to be considered to optimize a pyrolysis reactor for the production of ethylene and propylene. These parameters are included temperature, residence time, steam-to-hydrocarbon ratio, and feedstock composition. A higher reaction temperature results in a higher yield of ethylene, a shorter residence time, and higher reaction velocities. A low operating pressure is preferred for this process because of the gas phase reaction inside the reactor tubes and the production of more gaseous molecules for its reactions to the right. The reactor pressure must be kept as low as possible (between 170 and 250 kPa). The gas pressure in the reactor tube outlet is indirectly adjusted by the suction process gas pressure of the compressor in the compression section, downstream of the process. As mentioned earlier, to reach lower hydrocarbon pressures, process steam is co-fed with the hydrocarbon feed to reduce the hydrocarbon partial pressure and lower coke deposition. The addition of steam decreases the partial pressure of the hydrocarbon feed and favors the formation of primary products. 2ff7e9595c
